Halloween Black Rice Risotto

Ingredients (Serves 4)

1 cup Scotti Black Rice

1 small onion, finely chopped

2 cloves garlic, minced

4 cups vegetable or chicken stock, kept warm

2 tablespoons olive oil

50g butter

50g Parmesan, grated

Salt and black pepper, to taste

Fresh parsley, for garnish
Instructions

Prep the Base
Heat olive oil in a large pan over medium heat. Add onion and garlic, sauté until translucent and fragrant. -
Toast the Rice
Add the Scotti Black Rice to the pan and stir for 1–2 minutes, coating each grain in oil. This enhances the nutty flavor.

Add Stock Gradually
Add warm stock one ladle at a time, stirring frequently. Wait until the liquid is mostly absorbed before adding more. Continue until the rice is tender but still slightly chewy (about 30–35 minutes). -
Finish the Risotto
Remove from heat. Stir in butter and grated Parmesan. Season with salt and black pepper to taste. -
Serve & Garnish
Plate the risotto in shallow bowls. Sprinkle with fresh parsley for a pop of color. For a spooky Halloween touch, you can add a few black olives or drizzle a little olive oil in a circular pattern for a dramatic effect.
