Easy Spaghetti all’Amatriciana

Ingredients

200g spaghetti

1 jar Amatriciana Pasta Sauce (Casa Rinaldi 190g or Barilla 300g)

1 tbsp extra virgin olive oil

Salt (for boiling water)

2 to 3 tablespoons finely grated Parmigiano Reggiano or Grana Padano (available at Luxe Colombo)

Freshly cracked black pepper (optional)
Instructions

Cook the spaghetti
Bring a large pot of salted water to a boil. Cook the spaghetti until al dente according to the package instructions. Reserve about ½ cup of pasta water before draining. -
Heat the sauce
In a wide pan, warm 1 tablespoon of olive oil over low heat. Add the Amatriciana sauce and gently heat for 3–5 minutes. If the sauce is thick, add a splash of reserved pasta water to loosen it. -
Combine pasta and sauce
Add the drained spaghetti to the pan with the sauce. Toss well to coat the pasta evenly. Let it cook together for 1–2 minutes so the flavours blend. -
Add the cheese
Remove the pan from heat. Sprinkle the finely grated Parmigiano Reggiano or Grana Padano over the pasta. Toss gently to combine. If needed, add a little more pasta water to create a creamy, glossy finish. -
Serve
Plate the pasta immediately. Finish with a sprinkle of freshly cracked black pepper if desired.
